Baked Barbados Bananas (Serves 6)

Not one for the kids, but a big WOW for an adult dinner party, sooo easy and really yummy. The Aga baking dish is perfect for this recipe, as it’s cooked and served in one dish, easy on the washing up…. Perfect !!

Ingredients

Peel the bananas and slice in half lengthways, arrange nicely into the baking dish. Pour the rum over the bananas. Pour the coconut milk over them. Sprinkle the top evenly with the sugar and the spices. Bake on the grid shelf, on the floor of the roasting oven for 25 minutes. Serve with more rum !! some ice-cream, and a shortbread biscuit for balance.

Notes This dish can be prepared, and put in the fridge, uncooked, for a few hours before needed. It can also be kept warm in the simmering or warming (4 oven aga’s) oven for up to an hour.
